Ingredients

  • 1.5 pounds leg of lamb 
  • 0.5 cup onion chopped
  • 0.3 cup parsley fresh chopped
  • tablespoons juice of lemon 
  • teaspoon ground cinnamon 
  • teaspoons honey 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon pepper 
  • 0.1 teaspoon ground pepper red (cayenne)
  •  garlic clove finely chopped
  • cups couscous hot cooked
  • serving hot sauce red
  • 0.3 cup mint leaves fresh chopped

Directions

  1. Remove fat from lamb.
  2. Cut lamb into 1 1/2-inch cubes.
  3. Mix remaining ingredients except couscous, mint and pepper sauce in glass or plastic bowl.
  4. Add lamb; stir to coat with marinade. Cover and refrigerate 4 hours.
  5. Set oven control to broil. Spray broiler pan rack with cooking spray.
  6. Remove lamb from marinade.
  7. Place lamb on rack in broiler pan. Broil with tops 5 inches from heat 6 minutes; turn. Spoon pan drippings over lamb. Broil about 7 minutes longer or until no longer pink in center.
  8. Mix couscous and mint.
  9. Serve lamb over couscous.
  10. Serve with pepper sauce.
