Ingredients

  • cups baking apples are apples that have a sweet-tart balance and hold their shape when chopped
  • 0.5 cup granulated sugar 
  • 0.3 cup brown sugar packed
  • teaspoon ground cinnamon 
  • 0.5 cup peach schnapps 
  • 0.5 cup butter melted
  • 17.5 oz basic cookie mix 
  • cup whipping cream 
  • tablespoon peach schnapps 
  • tablespoon powdered sugar 
  • serving mrs richardson's butterscotch caramel sauce

Directions

  1. Heat oven to 375°F. Spray bottom only of 8-inch square pan with cooking spray. In large bowl, toss apples, granulated sugar, brown sugar, cinnamon and 1/2 cup schnapps.
  2. Spread in pan.
  3. In medium bowl, mix melted butter and cookie mix.
  4. Spread on top of apples.
  5. Bake 40 minutes.
  6. Meanwhile, in chilled medium bowl, beat whipping cream, 1 tablespoon schnapps and the powdered sugar with electric mixer on medium-high speed until stiff peaks form.
  7. To serve, alternately spoon warm apple crisp and cream mixture into small glasses. Top each with caramel topping.
  8. Serve immediately.
