Ingredients

  • large eggplant stemmed trimmed
  • head garlic clove whole
  • cup water 
  • cup mayonnaise 
  • tablespoon lemon zest finely grated
  • tablespoons juice of lemon fresh
  • 0.3 teaspoon pepper white
  • pinch sugar 
  • pinch salt
