Ingredients

  • 0.8 cup almonds raw coarsely chopped
  • tablespoon flaxseeds 
  • 0.5 teaspoon ground cinnamon 
  • 0.3 teaspoon ground ginger 
  • 0.3 cup honey 
  • 0.8 teaspoon kosher salt divided
  • tablespoons brown sugar light packed ()
  • servings fruit fresh thinly sliced
  • 0.3 cup millet 
  • cups oats 
  • tablespoons olive oil extra virgin extra-virgin divided
  • 0.5 cup raisins 
  • 0.3 cup pumpkin seeds raw shelled (pepitas)
  • 0.3 cup sunflower seeds raw
  • tablespoon sugar 
  • servings yogurt

Directions

  1. Heat oven to 300°F.
  2. Mix oats, millet andflaxseeds (if using), 1/4 teaspoon salt, cinnamon,and ginger in a medium bowl.
  3. Add 1 cup hottap water.
  4. Mix thoroughly and let stand for15 minutes to soften oats.
  5. Bring honey, 2 tablespoons oil, and brown sugarto a boil in a small saucepan, stirring todissolve sugar.
  6. Add honey mixture to oatmixture in bowl and toss to coat.
  7. Spreadout in an even layer on a large rimmedbaking sheet.
  8. Bake oat mixture, stirring 2-3 times, untildark golden brown, 50-60 minutes.
  9. Placesheet on a wire rack and let oat mixture coolcompletely.
  10. Increase oven temperature to 350°F.
  11. Mixremaining 1/2 teaspoon salt, remaining 2 tablespoons oil,almonds, pumpkin and sunflower seeds, andsugar in a medium bowl.
  12. Spread in an evenlayer on another rimmed baking sheet.
  13. Bake,stirring occasionally, until golden brown,10-12 minutes.
  14. Place sheet on a wire rackand let nut mixture cool completely.
  15. Combine oat mixture, nut mixture, andraisins in a large bowl. DO AHEAD: Granolacan be made 1 week ahead. Store airtight atroom temperature.
  16. Serve granola in bowls with yogurt andsliced fresh fruit.
