Ingredients

  • 0.3 cup goat cheese crumbled
  • bunch kale stemmed
  • 1.5 tablespoons olive oil divided
  • tablespoons parmesan shredded
  • 21 ounces pizza dough whole-wheat prepared
  • 0.1 teaspoon pepper red crushed
  • medium sweet potatoes and into peeled cut into 1/2-inch cubes
  • tablespoon walnuts crushed

Directions

  1. Heat oven to 425°F. Boil a largepot of water. Cook potato inwater until fork-tender, 7 to 10minutes.
  2. Remove from heat,drain and let cool 5 minutes. Ina food processor, pulse potato, 1tablespoon oil, red pepper and a pinchof salt until sauce is smooth.
  3. Roll out dough until 1/4 inch thick.
  4. Spread potato sauce evenly overdough. Toss kale in remaining1/2 tablespoon oil; top pizza with goatcheese, kale and Parmesan.
  5. Bake until crust is golden,10 to 15 minutes, sprinkling onwalnuts in final 2 minutes.
