Ingredients

  • 16 ounce broccoli slaw 
  • servings cilantro leaves fresh
  • large cucumber peeled sliced
  • tablespoon fish sauce 
  • 0.5 cup cilantro leaves fresh chopped
  • teaspoon ginger fresh minced
  • 0.3 cup mint leaves fresh chopped
  •  spring onion finely chopped
  • 0.5 teaspoon ground pepper red
  • 0.5 cup juice of lime fresh
  • tablespoon olive oil 
  • pound pork chops boneless lean
  • 0.3 cup rice vinegar 
  • teaspoon sesame oil 
  • tablespoons soya sauce

Directions

  1. Process pork in a food processor until coarsely chopped.
  2. Saut pork in a large skillet coated with cooking spray over medium-high heat 8 to 10 minutes or until meat crumbles and is no longer pink.
  3. Drain and cool.
  4. Combine pork, cilantro, and next 7 ingredients.
  5. Stir together vinegar, soy sauce, and olive oil.
  6. Drizzle over slaw, tossing to coat. Top with pork mixture; serve with cucumber slices, and, if desired, rice.
  7. Garnish, if desired.
  8. Note: Fish sauce is found in Asian markets and large supermarkets.
