Ingredients

  • 0.5 cup basil fresh chopped
  •  garlic clove finely chopped
  • oz mozzarella cheese cut into 1/2-inch cubes (2 cups)
  • 0.5 cup parmesan cheese grated
  • 0.5 teaspoon pepper 
  • lb plum tomatoes chopped (Roma) (8 to 10 medium)
  • lb rotini pasta 
  • 1.5 teaspoons salt 
  • 0.5 cup vegetable oil

Directions

  1. In large bowl, mix tomatoes, garlic, salt, pepper, oil, basil and mozzarella cheese. Cover; refrigerate 2 hours to blend flavors.
  2. Meanwhile, cook and drain pasta as directed on package. Rinse with cold water to cool; drain.
  3. In large serving bowl, mix cooked pasta and tomato mixture until well combined.
  4. Sprinkle Parmesan cheese over top of salad.
