  • 0.3 cup butter cubed
  • 32 ounces chicken breast halves bone-in
  • 0.8 cup chicken broth 
  • 0.5 cup cream cheese softened
  •  basil fresh thinly sliced
  •  garlic clove minced
  • 0.8 cup cup heavy whipping cream 
  • 0.3 cup sun-dried olives chopped
  • tablespoon olive oil 
  • 0.5 cup part-skim mozzarella cheese shredded
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon salt 
  • teaspoons shallots chopped
  • 0.5 cup pkt spinach fresh chopped

Directions

  1. Preheat oven to 400°. In a small bowl, combine first five ingredients. Carefully loosen the skin on one side of each chicken breast to form a pocket; spread cheese mixture under the skin.
  2. Sprinkle with salt and pepper. In a large skillet, brown chicken on both sides in butter and oil.
  3. Transfer to an ungreased 13x9-in. baking dish.
  4. Bake, uncovered, 20-25 minutes or until a thermometer reads 170°.
  5. Meanwhile, in a small saucepan, combine wine, tomatoes, shallot, garlic and basil. Bring to a boil over medium-high heat; cook until reduced by half.
  6. Add cream and butter. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, stirring occasionally.
  7. Serve with chicken.
