  • cup buttermilk 
  • tablespoons dijon mustard 
  • large egg white 
  • cup flat-leaf parsley chopped
  • 0.3 cup catsup 
  • servings kosher salt and pepper 
  • 1.5 pounds pd of ground turkey lean
  • tablespoon olive oil 
  •  onion chopped
  • pounds potatoes red quartered
  • cups pkt spinach fresh thick chopped
  • 0.5 cup bread crumbs whole-wheat

Directions

  1. Heat oven to 400 F. In a bowl, combine the turkey, onion, spinach, parsley, bread crumbs, mustard, egg white, and 1/2 teaspoon each salt and pepper.
  2. Transfer the mixture to a baking sheet and form it into a 10-inch loaf.
  3. Spread with the ketchup.
  4. Bake until cooked through, 45 to 50 minutes. Meanwhile, place the potatoes in a large pot of cold water. Simmer until tender, 15 to 18 minutes.
