Ingredients

  • tablespoon butter 
  • ounces crimini mushrooms sliced
  • tablespoons thyme sprigs fresh chopped
  • 0.5 teaspoon kosher salt 
  • 0.5 cup beef broth fat-free
  • cups onion chopped
  • 1.5 pounds potatoes - remove skin red coarsely chopped
  • ounce turkey sausage italian hot
  • ounces swiss cheese shredded

Directions

  1. Preheat oven to 40
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add sausage to pan, and saut for 5 minutes or until browned, stirring to crumble.
  4. Remove sausage from pan; drain. Wipe pan with paper towels. Melt butter in pan.
  5. Add onion; saut 4 minutes, stirring occasionally.
  6. Add mushrooms; saut 6 minutes, stirring occasionally.
  7. Add potatoes and salt; saut 5 minutes or until browned, stirring occasionally.
  8. Stir in sausage and broth.
  9. Remove from heat. Spoon potato mixture into an 11 x 7-inch glass or ceramic baking dish coated with cooking spray; top with cheese. Cover and bake at 400 for 30 minutes. Uncover and bake an additional 15 minutes or until golden.
  10. Sprinkle with thyme.
