Ingredients

  • pound carrots shredded
  • tablespoon ginger fresh minced
  •  garlic clove minced
  •  cardamom pods green
  •  chilies dried red hot
  • teaspoon sea salt 
  • 1.5 cups sugar 
  • 0.5 cup water 
  • 0.8 cup vinegar white

Directions

  1. Remove seeds from cardamom pods, and discard pods.
  2. Combine cardamom seeds and chile in a spice mill or mortar and pestle; grind into a powder.
  3. Combine cardamom mixture, carrot, and next 5 ingredients in a medium saucepan over medium-high heat. Bring to a boil, and cook, stirring occasionally, 30 minutes.
  4. Add vinegar; reduce heat, and simmer 30 more minutes or until thickened.
  5. Transfer mixture to a bowl; cover and chill at least 1 hour.
