  • 0.3 cup butter 
  •  eggs 
  • 1.5 teaspoons basil dried fresh minced
  • 1.5 teaspoons marjoram dried fresh minced
  • 0.3 cup parsley fresh minced
  •  garlic clove minced
  • 0.5 cup monterrey jack cheese shredded
  • large onion chopped
  • 0.5 cup parmesan cheese grated
  • 0.5 teaspoon salt 
  • cups zucchini peeled chopped

Directions

  1. In a large skillet, saute the zucchini, onion and garlic in butter until tender; set aside. In a large bowl, whisk the eggs, Parmesan cheese, parsley, basil, marjoram and salt. Stir in zucchini mixture and Monterey Jack cheese.
  2. Pour into a greased 1-qt. baking dish.
  3. Bake at 350° for 20-25 minutes or until a knife inserted near the center comes out clean.
  4. Let stand for 5 minutes before serving.
