Blueberry Smoothie

I’ve been on a bit of a blueberry kick lately. Mainly because I have about 3 lbs of the fruit to use up in the next week or so before I hop on a plane and head out on my next adventure.

It’s been a fun (and delicious) week of experimenting, trying to use up all of the food I have in the fridge, freezer and cupboards. Many of the recipes being developed are keepers. I’m excited to make them again with a few minor tweaks and get them up on the blog.

Continuing on with my theme of clearing out the cupboards, I’ve been adding chia seeds to my smoothie every morning for the past few weeks. By doing so, I’ve noticed my energy has improved and my mind feels better overall, which makes sense that the Mayan word for chia is strength.

Chia seeds have an interesting history, dating back to as early as 3500 BC, being used by the Mayans on a regular basis. You can read more about the history of the chia seed here:http://azchia.com/chia-seeds-history/

This smoothie is so creamy, delicious, and satisfying. It’s the perfect way to start the day, and makes a great pre-workout energy boost. I’ll leave you with this recipe while I head back to the kitchen for more fun.

Blueberry Smoothie

Creamy Blueberry Smoothie

Ingredients
  • 1 cup Almond Milk or milk of choice
  • ½ cup Blueberries fresh or frozen
  • 1 frozen ripe Banana cut into pieces
  • ½ Avocado
  • 1 Tbsp Chia Seeds
Instructions
  1. Combine all ingredients in a blender and blend until smooth.

*If you can’t find chia seeds, this recipe is still delicious if you omit them.
