Ingredients

  • heads broccoli cut into small florets
  • stalks celery chopped
  • clove garlic crushed
  • tbsp olive oil 
  •  onion chopped
  • servings grinding of pepper black good
  • medium potatoes chopped
  • pints vegetable stock 
  • 160 watercress mixed or any leaves)

Directions

  1. Saute the onion, garlic and celery in the olive oil in a large pan until the onion is soft and translucent.
  2. Add the rest of the ingredients and bring to the boil. Reduce to a simmer and cook for 30 minutes until the potatoes are tender.
  3. Whizz until nearly smooth. I like to leave some texture in my soup.
  4. Season.
  5. Enjoy!
