  • 0.5 teaspoon pepper black freshly ground
  • 0.3 cup celery diced
  • tablespoons green onions chopped
  • large hardboiled eggs diced
  • tablespoon kosher salt divided
  • 0.5 cup canola mayonnaise 
  • 1.3 cups bell pepper diced red (1 large)
  • medium yukon gold potatoes ( 2 pounds 6 ounces)

Directions

  1. Combine 2 teaspoons salt and potatoes in a large saucepan; cover with cold water. Bring to a boil; cook 25 minutes or until potatoes are tender.
  2. Drain; rinse with cold water.
  3. Drain and let cool; cut into 1-inch pieces.
  4. Combine potatoes, remaining 1 teaspoon salt, bell pepper, and remaining ingredients in a large bowl; toss gently to coat.
