Ingredients

  • 0.3 cup natural almonds whole
  • 0.1 teaspoon pepper black freshly ground
  • tablespoon canola oil 
  • tablespoon dijon mustard 
  • tablespoons breadcrumbs dry
  • teaspoon garlic and herb seasoning blend salt-free (such as Mrs. Dash)
  • 12 ounce tilapia fillets 

Equipment

  • frying pan
  • blender

Directions

  1. Place first 4 ingredients in a blender or food processor; process 45 seconds or until finely ground.
  2. Transfer crumb mixture to a shallow dish.
  3. Heat oil in a large nonstick skillet over medium heat.
  4. Brush mustard over both sides of fillets; dredge in crumb mixture.
  5. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
  6. Sprinkle with parsley, if desired.
