Ingredients

  • 0.5 pound almond paste 
  • tablespoons blanched almonds and chopped
  • tablespoons cake flour 
  • 0.3 cup powdered sugar 
  •  egg whites 
  • 0.1 teaspoon salt 
  • cup granulated sugar white

Equipment

  • baking sheet
  • oven
  • mixing bowl
  • aluminum foil

Directions

  1. Cover cookie sheets with parchment or aluminum foil, shiny side up.
  2. Soften almond paste with your hands or food processor. In large mixing bowl, blend almond paste and sugar.
  3. Separate eggs and add whites to mixture.
  4. Mix in confectioners' sugar, flour and salt. Stir well.
  5. Force dough through a cookie press or drop by teaspoonfuls onto cookie sheets. Cover and let stand for 30 minutes.
  6. Preheat oven to 300 degrees F (150 degrees C).
  7. Sprinkle cookies with chopped almonds and bake for 25 minutes.
  8. Remove parchment or foil from cookie sheets and let cool. Peel off macaroons.
