Imagine sitting on a sun-kissed terrace along the Amalfi Coast, the gentle sound of waves lapping against the shore as you indulge in a delightful seafood feast. Our Amalfi-style prawns bring that coastal charm right to your kitchen, making it a fantastic choice for a light lunch or a satisfying dinner. Not only is this dish bursting with the fresh, vibrant flavors of garlic and mint, but it's also completely dairy-free, making it a lovely option for those with dietary restrictions.

The fun begins with marinating fresh, succulent prawns in a fragrant blend of olive oil, garlic, and aromatic mint. This step is crucial for infusing the prawns with delicious flavor, ensuring that every bite transports you to the Mediterranean. Once marinated, the prawns are skewered and coated in crispy breadcrumbs, providing a perfect contrast to their tender texture.

Grilling the skewers brings a slight smokiness, resulting in a dish that is not only picturesque but also delectable. Served alongside zesty lemon wedges, the Amalfi-style prawns are sure to impress your family and friends. With only 196 calories per serving, this meal effortlessly balances taste and health, making it an ideal choice for any occasion. Get ready to savor a bite of Italy with this easy-to-follow recipe!

Ingredients

  • tbsp olive oil extra-virgin
  •  garlic cloves crushed finely
  • 12  mint leaves chopped
  • 450 prawns raw peeled
  • 50 breadcrumbs dry
  • servings lemon wedges

Equipment

  • bowl
  • baking sheet
  • grill
  • skewers
  • wooden skewers

Directions

  1. Soak about 20 wooden skewers.
  2. Put the olive oil, garlic, most of the mint (save some for serving) and prawns in a medium bowl and season well. Toss to coat evenly, then chill and marinate for 1 hr.
  3. Heat the grill to medium. Thread 3-5 prawns onto each skewer.
  4. Place the breadcrumbs on a plate. Shake any excess marinade off the prawns, then press the breadcrumbs all over.
  5. Place all the skewers on a lightly oiled baking sheet, then place under the grill. Depending on the size of the prawns, cook on each side for around 2 mins, until the breadcrumbs are golden and the prawns have turned pink. Watch them closely as they cook very quickly. Scatter with mint; serve 5 per person with lemon wedges.
