  • 0.5 cup butter 
  • 1.5 cups buttery round crackers crushed
  • cups celery chopped
  • cups meat from a rotisserie chicken diced cooked
  • 10.5 ounce chicken broth canned
  • cup colby cheese shredded
  • 10.5 ounce cream of chicken soup canned
  • cups rice cooked
  • teaspoons juice of lemon 
  • 1.5 cups mayonnaise 
  • small onion chopped
  • teaspoons salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large pan over medium heat, stir together cream of chicken soup and water (or broth). Stir in chicken, chestnuts, lemon juice, and mayonnaise. Stir in celery, onion, salt, and rice.
  3. Combine well, then pour into a casserole dish.
  4. Melt butter in a skillet over medium heat.
  5. Pour in crushed crackers, and stir to coat with butter.
  6. Pour crackers over the top of casserole. Then sprinkle almonds and shredded cheese over the top.
  7. Bake in preheated oven until cheese is melted, about 30 minutes.
