Ingredients

  • 0.3 teaspoon peppercorns whole black
  • cup ginger fresh peeled chopped ( one 4x1" piece)
  • tablespoons ground coriander 
  • cups brown sugar light packed ()
  • cups soy sauce reduced-sodium
  • cups rice wine sweet ( Japanese rice wine)

Directions

  1. Bring sugar and 2 cups water to a boil in amedium heavy saucepan over medium-highheat, stirring until sugar dissolves. Boil for2 minutes.
  2. Reduce heat to medium; add mirinand next 4 ingredients. Simmer, stirringoften, until sauce thickens slightly and hasreduced to about 4 cups, 60-70 minutes.
  3. Strain sauce through a fine-mesh sieveinto a large heatproof pitcher. Divideamong jars.
  4. Let cool. Screw on lids and chill.DO AHEAD: Ambrosia sauce can be made2 months ahead. Keep refrigerated.
