Ingredients

  • 0.8 teaspoon ancho chile powder 
  • 0.1 teaspoon ground allspice 
  • 0.3 teaspoon ground cumin 
  • tablespoons jalapeño pepper jelly 
  • pound pork tenderloin trimmed
  • teaspoon juice of lime 
  • teaspoons olive oil 
  • 0.5 teaspoon salt 
  • 0.3 teaspoon sugar

Directions

  1. Cut pork crosswise into 8 equal pieces.
  2. Combine chile powder and next 4 ingredients (through allspice) in a small bowl; rub evenly over both sides of pork.
  3. Combine jelly and lime juice; set aside.
  4. Heat oil in a large heavy skillet over medium-high heat.
  5. Add pork to pan; cook 1 minute on each side.
  6. Brush pork with half of jelly mixture; turn and brush with remaining jelly mixture. Cook 1 minute on each side or until desired degree of doneness.
  7. Remove pork from pan; let stand 5 minutes before serving.
