Ingredients

  • tablespoons apple cider vinegar 
  • 0.3 cup apple juice frozen thawed
  • 2.5 cups carrots grated peeled
  • medium apples i use 2 granny smith apples cored grated peeled
  • cups cabbage shredded green ( 1 small head)
  •  spring onion thinly sliced
  • 0.5 cup mayonnaise 
  • tablespoons poppy seeds 
  • 0.7 cup cream sour

Directions

  1. Mix cabbage, carrots, apples, and green onions in large bowl.
  2. Add vinegar and toss to coat.
  3. Whisk sour cream, mayonnaise, apple juice concentrate and poppy seeds in medium bowl to blend.
  4. Add to cabbage mixture and toss to blend. Season to taste with salt and pepper. Cover and refrigerate at least 1 hour. (Can be made 1 day ahead. Keep refrigerated. Toss to blend before serving.)
