  • cup rome apple diced peeled
  • 0.8 teaspoon double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • 0.8 cup firmly brown sugar dark packed
  • 0.5 cup currants dried
  • large eggs 
  • cup flour all-purpose
  • teaspoon ground cinnamon 
  • 0.3 teaspoon ground nutmeg 
  • 0.3 cup butter 
  • 0.8 cup regular oats uncooked
  • tablespoon powdered sugar 
  • 0.3 teaspoon salt 
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 35
  2. Combine first 6 ingredients. Stir well; set aside.
  3. Cream margarine in a large bowl; gradually add brown sugar, beating at medium speed of a mixer until light and fluffy.
  4. Add egg; beat well.
  5. Add flour mixture to creamed mixture; beat just until dry ingredients are moist. Stir in vanilla, apple, oats, and currants.
  6. Spoon batter into a 9-inch square baking pan coated with cooking spray.
  7. Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.
  8. Sprinkle powdered sugar over top.
