  • cups apricots sliced ( 12 medium)
  • cups cherries pitted halved
  • teaspoon mustard dry
  • tablespoons juice of lime fresh
  • tablespoon poppy seeds 
  • teaspoon salt 
  • 0.3 cup sugar 
  • cups watercress trimmed
  • tablespoons vegetable oil 
  • tablespoons water

Directions

  1. To prepare vinaigrette, place first 5 ingredients in a blender, and process until blended.
  2. Add oil and poppy seeds, and process until blended.
  3. To prepare salad, place 1 cup watercress on each of 6 plates. Top each serving with 2/3 cup apricot slices and 1/2 cup cherries.
  4. Drizzle 2 tablespoons vinaigrette over each salad.
