  • cup apricot preserves 
  • 0.3 cup balsamic vinegar to taste
  • pounds chicken tenderloins cut into bite-size pieces
  • cup chicken stock see 
  • 20  apricot dried
  • tablespoon thyme sprigs fresh chopped
  • tablespoons olive oil extra virgin extra-virgin
  • servings salt and pepper to taste
