Ingredients

  • cups apple cider vinegar 
  • 0.5 pound apricots pitted coarsely chopped
  •  bay leaves 
  •  chile de árbol fresh red with seeds chopped
  •  habanero chiles with seeds, 1 chopped without chopped
  •  jalapeño with seeds chopped
  • cup brown sugar light
  • 25 servings salt 
  • large thai chile with seeds chopped (large)

Directions

  1. In a medium saucepan, combine the cider vinegar and brown sugar and bring to a boil to dissolve the sugar.
  2. Add the apricots, all of the chiles and the bay leaves and simmer over moderate heat until the apricots are soft, about 5 minutes.
  3. Let cool, then discard the bay leaves.
  4. In a blender, puree the apricot mixture until smooth. Season with salt.
  5. Transfer the hot sauce to bottles or small jars and store in the refrigerator for up to 1 month.
