Ingredients

  • 0.3 cup almonds toasted sliced
  • 0.3 cup apricot preserves 
  • 0.5 cup apricots dried diced
  • 10 oz couscous with far east)
  • tablespoons dijon honey mustard 
  • tablespoon olive oil 
  • 0.3 teaspoon pepper 
  • 1.3 lb pork tenderloin 
  • 0.3 teaspoon salt 

Equipment

  • kitchen thermometer
  • aluminum foil
  • broiler pan

Directions

  1. Brush pork with olive oil; season with salt and pepper.
  2. Place on an aluminum foil-lined broiler pan.
  3. Broil 5 1/2" from heat 8 minutes or until browned, turning once.
  4. Combine apricot preserves and honey mustard; spread over pork. Continue to broil 10 more minutes, turning once, or until meat thermometer inserted in center of meat registers 15
  5. Cover pork with aluminum foil, and let stand 5 minutes.
  6. Meanwhile, prepare couscous according to package directions. Fluff couscous; stir in apricots and almonds. Slice pork, and serve with couscous.
