  • 0.5 cup apricot preserves 
  • 0.1 teaspoon pepper black
  • teaspoon bottled garlic minced
  • teaspoons dijon mustard 
  • 0.1 teaspoon ground cinnamon 
  • ounce lamb loin chops trimmed
  • teaspoon soya sauce low-sodium
  • 0.3 teaspoon salt 
  • 0.5 teaspoon worcestershire sauce

Directions

  1. Combine first 5 ingredients in a small bowl; set aside.
  2. Combine salt, cinnamon, and pepper, and sprinkle over both sides of lamb.
  3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  4. Add lamb to pan; cook 5 minutes on each side or until desired degree of doneness.
  5. Remove skillet from heat; add apricot mixture, turning lamb to coat.
  6. Place 2 chops on each of 4 dinner plates; spoon remaining apricot mixture evenly over chops.
