Ingredients

  • pound apricots pitted plus more for serving, , sliced
  • 0.8 cup sparkling wine plus more for serving
  • cup sugar

Directions

  1. Bring sugar, 1 pound apricots, 3/4 cupsparkling wine, and 2 cups water to aboil in a medium saucepan. Reduceheat and simmer, stirring occasionally,until apricots are very tender, 10-15minutes.
  2. Let cool completely.
  3. Transfer apricot mixture to a blenderand purée until smooth.
  4. Add water toapricot mixture so it measures 4 cups.
  5. Transfer mixture to a large shallowbaking dish. Freeze until solid, at least4 hours.
  6. To serve, scoop sorbet into coupeglasses or bowls and top with moreapricot slices and some sparkling wine.
