Ingredients

  • 0.5 teaspoon basil dried
  • 18 ounce artichoke hearts frozen
  • tablespoon oregano dried
  • ounce pimientos diced drained
  • tablespoons pickle sweet chopped
  • 0.5 cup vegetable oil 
  • 0.5 cup citrus champagne vinegar

Directions

  1. Cook artichokes according to package directions; drain.
  2. Place in a glass bowl.
  3. Add pimiento; toss gently.
  4. Combine oil and remaining ingredients in a jar; cover tightly and shake vigorously.
  5. Pour over artichokes; toss gently. Chill until ready to serve.
  6. Serve with a slotted spoon.
