  •  bartlett pears cut into 6 wedges each
  • ounces cheese blue crumbled
  • 0.5 cup champagne vinegar 
  • teaspoons dijon mustard 
  • 0.5 cup olive oil 
  • 0.3 cup pear preserves 
  • 0.3 teaspoon pepper freshly ground
  • 0.5 teaspoon salt 
  •  shallots sliced
  • 0.3 cup walnuts toasted chopped
