  • 0.5 tablespoon garlic minced
  • 0.5 teaspoon garlic minced
  • tablespoon olive oil 
  • 0.3 cup parmesan shaved
  • 0.3 cup pecorino cheese shaved
  • tablespoon rice vinegar 
  • tablespoons roasted bell peppers red minced
  • servings salt and pepper black freshly ground
  • 0.3 pound shrimp shelled deveined
  • tablespoons balsamic vinegar white

Directions

  1. For dressing:Puree red bell pepper, add vinegars and garlic.
  2. Add olive oil.
  3. Add salt and pepper, to taste, but keep in mind that arugula is peppery, so light on the pepper.
  4. For Shrimp:Toss the shrimp with olive oil and minced garlic. Sear in a hot pan, until just cooked. Set aside.
  5. Place arugula on serving plate, drizzle with a little dressing, add shrimp, and top with pecorino romano and Parmesan.
