Ingredients

  • large leaves bibb lettuce 
  • cup & flavor infused broth sour hot chinese swanson®
  • medium carrots shredded peeled
  • tablespoons cornstarch 
  • 0.5 teaspoon pepper red crushed
  • 0.3 cup cilantro leaves fresh chopped
  • inch ginger root fresh minced peeled
  • cloves garlic minced
  •  green onions thinly sliced
  • pound pd of ground turkey 
  • tablespoon juice of lime 
  • 0.3 cup peanuts chopped

Directions

  1. Cook the turkey in a 12-inch nonstick skillet over medium-high heat until well browned, stirring often to separate meat.
  2. Pour off any fat.
  3. Add the carrot, garlic, ginger and red pepper to the skillet and cook and stir for 1 minute.
  4. Add 1/2 cup broth and heat to a boil.
  5. Stir the remaining broth and the cornstarch in a small bowl until the mixture is smooth.
  6. Add the cornstarch mixture to the skillet. Cook and stir for 2 minutes or until the mixture boils and thickens.
  7. Stir in the cilantro and lime juice just before serving. Spoon about 1/4 cup turkey mixture into each lettuce leaf.
  8. Sprinkle with the green onions and peanuts.
