Ingredients

  • teaspoons sriracha 
  • cup cucumber thinly sliced
  • tablespoons fish sauce (such as nam pla or nuoc nam)
  • 0.5 cup cilantro leaves fresh loosely packed ()
  • 0.5 cup mint leaves fresh loosely packed ()
  • 4.5 tablespoons juice of lime fresh
  •  bell pepper red thinly sliced
  • 6.8 ounce vermicelli (maifun)
  • pound shrimp deveined cooked peeled
  • teaspoons sugar 
  • cups sugar snap peas

Directions

  1. Cook noodles in large saucepan ofboiling salted water until tender, stirringoccasionally, 4 to 5 minutes.
  2. Drain. Rinsewith cold water; drain well. Using scissors,cut noodles into thirds.
  3. Whisk lime juice, fish sauce, chili-garlicsauce, and sugar in small bowl until sugardissolves.
  4. Place shrimp in medium bowl.
  5. Add 2 tablespoons dressing; toss to coat.
  6. Divide noodles among bowls. Topwith cucumber slices and all remainingingredients. Spoon shrimp with dressingover, and drizzle with remaining dressing.
