Ingredients

  • cup baby corn from a jar 
  • 0.1 teaspoon pepper black
  • ounce water chestnuts rinsed canned
  •  shallot clove quartered
  • cup grape tomatoes halved
  • cups mesclun greens mixed dried
  • ounce mandarin orange segents drained canned
  • teaspoons peanut butter 
  •  bell pepper red seeds removed and sliced julienne
  • 0.1 cup rice wine vinegar 
  • 0.5 teaspoon salt 
  • 0.5 cup sesame oil 
  • tablespoon sesame seed

Directions

  1. Add 1 at a time through the feed tube of a running blender, vinegar, shallot, salt, pepper, tahini, and sesame seeds. Leaving the blender running add the oil in a slow thin stream. Set aside briefly.
  2. Toss greens, corn, orange, bell pepper, water chestnuts, and tomatoes together in a large bowl with enough dressing to coat.
  3. Serve with additional dressing on the side.
