  • 12 ounce beef tenderloin steaks trimmed ()
  • 0.1 teaspoon pepper black freshly ground
  • 1.5 cups cucumber english thinly sliced
  • teaspoon fish sauce 
  • tablespoons basil fresh thinly sliced
  • 0.3 cup cilantro leaves fresh chopped
  • teaspoon granulated sugar 
  • cups torn leaf lettuce red
  • tablespoon juice of lime fresh
  • tablespoon rice vinegar 
  • 0.3 teaspoon salt 
  • 0.3 teaspoon sesame oil 
  • 0.3 cup shallots thinly sliced ( 2 small)
  • 1.5 teaspoons sriracha such as huy fong) hot

Directions

  1. To prepare dressing, combine the first 6 ingredients in a small bowl, stirring well with a whisk.
  2. Prepare grill.
  3. To prepare salad, sprinkle both sides of steak with salt and pepper.
  4. Place steak on a grill rack coated with cooking spray; grill for 4 minutes on each side or until desired degree of doneness.
  5. Let stand 5 minutes.
  6. Cut steak diagonally across grain into thin slices.
  7. Combine lettuce and remaining ingredients in a large bowl.
  8. Add steak to bowl.
  9. Drizzle salad mixture with dressing mixture; toss to coat.
  10. Serve immediately.
