  • bunch asparagus 
  • servings pepper black to taste
  • 0.1 cup olive oil extra virgin extra-virgin
  • cup pecorino cheese grated
  • small onion diced red finely
  • 0.5 cup red wine vinegar

  1. Cut the asparagus, including the tips into very thin slices, crosswise and place in a medium bowl.
