  • teaspoons chili puree (see below)
  • cup cucumber diced english ()
  • tablespoons juice of lime 
  • 1.5 pounds oranges 
  • 0.5 cup onion red minced
  • servings salt

Directions

  1. Cut ends off oranges, then cut off peels and outer membranes and discard. Slice oranges 1/2 inch thick, then cut into cubes, discarding seeds.
  2. Place in a bowl.
  3. Pit, peel, and dice avocados; add to oranges.
  4. Add cucumber, onion, lime juice, and chipotle pure and salt to taste; mix gently.
  5. To make chipotle chile pure, whirl the contents of a 7-ounce can of chipotle chiles (including sauce) in a blender or food processor until smooth.
  6. Scrape into a plastic container and store airtight in the refrigerator for up to 3 weeks.
