Ingredients

  •  avocado ripe coarsely chopped
  • 0.3 teaspoon pepper black freshly ground
  • 0.5 cup butter cut into small pieces
  • cup cilantro leaves fresh chopped
  •  garlic clove coarsely chopped
  •  jalapeno seeded
  • tablespoons juice of lime fresh
  • 0.5 teaspoon salt 
  •  shallots coarsely chopped
  •  tomatillos husked quartered
  • cup water

Directions

  1. Combine tomatillos and next 4 ingredients in a saucepan. Bring to a boil, reduce heat, and simmer about 30 minutes.
  2. Pour mixture through a wire-mesh strainer into a container, reserving 1/2 cup liquid.
  3. Place tomatillo mixture and reserved liquid in a blender.
  4. Add avocado, cilantro, and lime juice; process until smooth.
  5. Transfer to a saucepan, and heat until warm. Gradually whisk in butter, salt, and pepper until well blended.
