  •  green onions finely chopped
  • 0.3 cup cup heavy whipping cream sour reduced-fat
  • 0.1 teaspoon pepper 
  • pound potatoes red
  • 0.5 teaspoon salt 
  • ounces pre-shredded sharp cheddar cheese reduced-fat

Directions

  1. Preheat oven to 35
  2. Pierce potatoes with a fork; arrange on paper towels in microwave oven. Microwave at HIGH 6 minutes or until tender.
  3. Let stand 5 minutes.
  4. Cut each potato in half; scoop out pulp, reserving shells.
  5. Combine potato pulp, onions, and remaining ingredients with a mixer at medium speed.
  6. Spoon potato mixture into shells.
  7. Place on a baking sheet; bake at 350 for 10 minutes or until thoroughly heated.
