  • ounces bacon roughly chopped
  • 12 large eggs 
  • oz feta cheese crumbled
  • 0.1 teaspoon pepper 
  • 0.3 teaspoon salt 
  •  spring onion light white green thinly sliced
  • cup cheddar cheese shredded
  • tablespoons milk whole

Directions

  1. Preheat oven to 350F. Lightly mist an 8-inch square baking dish with cooking spray. In a large skillet over medium heat, cook bacon until crisp, 5 to 7 minutes, stirring occasionally.
  2. Remove to a paper towel-lined plate.
  3. In a medium bowl, beat eggs, milk and 2 Tbsp. water. Stir in feta, salt and pepper, half of bacon and all but 2 Tbsp. scallions.
  4. Pour mixture into baking dish.
  5. Bake until almost set in center, about 15 minutes.
  6. Remove from oven; sprinkle with Cheddar and reserved bacon and scallions.
  7. Bake until center is set and cheese has melted, 5 to 7 minutes longer.
