Ingredients

  • slices bacon chopped
  • 30 oz black beans undrained canned
  • tablespoons cilantro leaves chopped
  • cloves garlic chopped
  •  bell pepper diced green seeded
  • teaspoon ground cumin 
  •  jalapeno diced seeded finely
  • tablespoons juice of lime 
  • large onion diced
  • 0.5 teaspoon oregano dried
  • 10 servings salt 
  •  spring onion thinly sliced
  • large tomatoes diced

Directions

  1. Cook bacon in a skillet over medium heat until crisp, 10 minutes.
  2. Drain on paper towels.
  3. Drain all but 1 Tbsp. fat from skillet.
  4. Add onion and peppers; cook over medium-high heat until soft, 8 minutes.
  5. Add spices; saut for 1 minute.
  6. Add beans; raise heat to high. Bring mixture to a boil, reduce heat and simmer until thickened and slightly reduced, 10 minutes.
  7. Puree half of mixture in a blender. Stir puree into remaining mixture in a bowl; season with salt and lime juice.
  8. Let dip cool to room temperature; stir in scallions, cilantro, tomato and bacon.
