Ingredients

  • rib celery finely chopped
  • 0.5 pound bacon crumbled cooked
  •  green onions chopped
  • 0.5 cup mayonnaise 
  • servings garnishes: paprika 
  • 0.3 teaspoon pepper 
  • tablespoons pimientos diced drained
  • pounds to 8 potatoes peeled cut into 1-inch cubes
  • 0.8 teaspoon salt 
  • 0.5 cup cup heavy whipping cream sour

Directions

  1. Cook potatoes in boiling water to cover in a Dutch oven over medium heat 15 to 18 minutes or until tender.
  2. Drain and let cool slightly.
  3. Place potatoes in a large bowl.
  4. Add bacon, chopped green onions, and next 4 ingredients. Stir together mayonnaise and sour cream until blended.
  5. Pour over potato mixture, tossing gently to coat. Cover and chill at least 1 hour.
  6. Garnish, if desired.
