  • 30 ounce no-salt-added black beans rinsed drained canned
  •  garlic cloves minced
  • 0.3 cup green onions thinly sliced
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon ground pepper red
  •  jalapeno sliced
  • 0.8 cup lower-sodium chicken broth fat-free
  • ounces monterrey jack cheese shredded
  • tablespoon olive oil 
  • 1.5 cups onion chopped
  • 0.5 teaspoon salt 
  • 0.5 cup chorizo diced spanish
  • cup tomatoes seeded chopped

Directions

  1. Preheat oven to 42
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add oil to pan; swirl to coat.
  4. Add chorizo; saut for 2 minutes.
  5. Remove chorizo from pan. Coat pan with cooking spray.
  6. Add onion and jalapeo; saut 4 minutes, stirring occasionally.
  7. Add salt, cumin, red pepper, and garlic; saut 1 minute, stirring constantly. Stir in broth and beans; bring to a boil. Cook 5 minutes. Mash to desired consistency. Spoon bean mixture into an 8-inch square baking dish coated with cooking spray.
  8. Top with chorizo, tomato, and cheese.
  9. Bake at 425 for 30 minutes or until lightly browned. Top with green onions.
