Suggestions

If you’re craving comfort food with a little flair, this Baked Chicken with Ciabatta Dressing is the kind of dish that makes you linger at the table a bit longer. Imagine golden, skin-on chicken breasts nestled into a rich, savory bed of ciabatta bread that’s soaked up every drop of flavor from buttery sautéed vegetables, Marsala wine, and chicken stock. It’s the perfect balance of rustic and refined—hearty enough for a cozy dinner, yet impressive enough to serve when you want to wow someone without spending all day in the kitchen.
The ciabatta dressing is where the magic really happens. Celery, onion, leeks, garlic, and mushrooms come together with smoky adobo sauce and classic poultry seasoning to create a deeply aromatic base that feels like a hug in food form. As the bread absorbs the flavorful liquid, it transforms into a beautifully textured stuffing that crisps slightly on top while staying tender underneath the chicken.
With a satisfying mix of protein, fat, and carbs, this dish is a full, comforting meal in one pan—ideal for lunch or dinner when you want something that feels special but still approachable. If you love recipes that turn simple ingredients into something unforgettable, this baked chicken and ciabatta combo is going to earn a regular spot in your meal rotation.

Ingredients

  • tablespoons chiles in adobo sauce
  • 16 ounce skin-on chicken breasts
  • tablespoons butter
  • ribs celery diced
  • cup chicken stock see
  • cups ciabatta bread cubed
  • tablespoons garlic minced
  • cup leeks sliced
  • 0.3 cup marsala wine
  • small onion diced
  • 0.3 cup parsley leaves chopped
  • teaspoons poultry seasoning plus more for sprinkling
  • servings salt and freshly cracked pepper black
  • cup mushrooms white sliced

Equipment

  • frying pan
  • oven
  • kitchen thermometer

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a large deep saute pan over medium-high heat, add 2 tablespoons of the butter.
  3. Add the celery, onions, and garlic and cook until soft. Stir in the mushrooms, adobo sauce, poultry seasoning, wine, and chicken stock. Cook until warmed throughout, then add the bread. Turn the heat to low, and let the bread absorb the liquid.
  4. Sprinkle with the parsley and leeks, and stir to combine.
  5. In a large saute pan, over medium-high heat, add the remaining 2 tablespoons of butter and allow it to brown. Season the chicken breasts with salt, pepper, to taste, and sprinkle with a little poultry seasoning. Sear the chicken breasts, skin side down, about 2 minutes per side. Nestle the chicken breasts into the bread mixture.
  6. Bake until an internal temperature registers 165 degrees F on an instant-read thermometer, about 20 to 25 minutes.
  7. Remove the chicken from the oven, transfer it to a serving platter and serve.
