Ingredients

  • 0.3 teaspoon pepper black as needed freshly ground plus more
  • large eggs 
  • 0.5 teaspoon kosher salt as needed plus more
  • 0.3 cup olive oil 
  • pound chicken breast boneless skinless cut lengthwise into 1/2-inch pieces
  • ounces crackers whole-wheat such as wheatsworth crushed finely

Directions

  1. Heat the oven to 450°F and arrange a rack in the middle. Set a wire rack on a baking sheet and set it aside.Season the chicken on both sides with salt and pepper; set aside.
  2. Combine the cracker crumbs, olive oil, and measured salt and pepper in a shallow dish.
  3. Place the eggs in a second shallow dish and lightly beat with a fork to break them up. Dip the chicken pieces in the eggs, allowing any excess to drip off, then dip them in the cracker mixture, turning and patting to get the crumbs to adhere.
