  •  garlic cloves chopped
  • 1.8 pounds heirloom tomatoes fresh cut into 1/2-inch pieces
  • tablespoons olive oil extra-virgin
  • medium onion chopped
  • cup parmesan cheese packed freshly grated ()
  • cup romano cheese packed freshly grated ()
