  • 0.3 teaspoon pepper black
  • 0.3 cup cooking wine dry white
  • tablespoons parsley fresh minced
  •  garlic clove minced
  • 36 ounce grouper fillets 
  • 0.3 cup kalamata olives pitted chopped
  • tablespoon olive oil extra-virgin
  •  bell pepper red peeled chopped
  • teaspoons red wine vinegar 
  • 0.3 teaspoon salt 
  •  bell pepper yellow peeled chopped
  • 1.5 teaspoons or dried fresh minced

Directions

  1. Preheat oven to 37
  2. Combine first 9 ingredients in a bowl.
  3. Sprinkle fish with 1/4 teaspoon salt and black pepper.
  4. Place fish in a 13 x 9-inch baking dish coated with cooking spray.
  5. Add wine to baking dish.
  6. Bake at 375 for 24 minutes or until fish flakes easily when tested with a fork.
  7. Serve with pepper relish.
  8. Garnish with thyme sprigs, if desired.
