  • 36 ounce baking potatoes 
  • 0.3 cup cheese blue crumbled
  • 0.5 cup celery chopped ( 1 large rib)
  • teaspoons cider vinegar 
  • 0.5 cup green onions sliced ( 2 large)
  • 0.5 teaspoon ground pepper 
  • 0.5 cup cup heavy whipping cream sour reduced-fat
  • 0.3 cup nonfat buttermilk 
  • 0.3 teaspoon salt

Directions

  1. Scrub potatoes; pierce with a fork, and arrange in a circle on a paper towel in microwave oven. Microwave at HIGH 18 minutes, turning and rearranging potatoes halfway through cooking time. Cover and let stand 5 minutes.
  2. Let cool slightly.
  3. Cut unpeeled potatoes into 1/2-inch cubes.
  4. Combine sour cream and next 4 ingredients in a large bowl, stirring until smooth.
  5. Add potato, green onions, celery, and blue cheese; toss gently to combine. Cover and chill at least 8 hours.
