Ingredients

  • servings olive oil extra virgin 
  • 24 ounce salmon fillet 
  • servings salt 
  • servings pepper black freshly ground
  • small mangos ripe ()
  •  just avocados ripe
  • 0.3 cup onion red minced
  •  serrano chile with seeds f heat, without for less) minced
  •  juice of lime juiced ( 4 Tbsp lime juice)

Directions

  1. Preheat oven to 400°F.

  3. Cut a Mango. Set the cut mango aside in a medium bowl.
  4. the salmon fillets: Line a roasting pan with aluminum foil.
  5. Spread some olive oil on top of the foil. Coat the salmon fillets with olive oil and lay, skin side down, on the foil lined roasting pan.
  6. Sprinkle with salt.
  7. Place in the 400°F oven and cook for 10 minutes.
